The yanagiba is one of the most iconic Japanese knives, designed for slicing sashimi with precision and elegance. Its long, slender blade glides through fish in a single pull, preserving cellular structure, freshness, and umami while leaving a smooth, lustrous cut.
This particular piece is forged by Satoshi Nakagawa, a talented young traditional craftsman, using Blue Paper Steel No.1 (Aogami #1) laminated with soft iron in a 16-layer suminagashi construction.
Unlike Damascus steel, which is widely produced internationally, suminagashi is a uniquely Japanese technique. The blade’s flowing wave-like patterns are not only visually striking but also a testament to the artisan’s refined forging skill and relentless dedication.
