The yanagiba is a traditional Japanese knife designed for slicing sashimi with precision, creating smooth, glossy cuts without damaging the texture of the fish.
This piece is forged from Gingami No.3 steel (Silver-3 stainless steel) using the hon-yaki (oil quenching) method. The result is a blade that balances razor-sharp performance with ease of handling.
Crafted by master artisan Shogo Yamatsuka, a certified traditional craftsman renowned for his advanced heat-treatment techniques, this yanagiba embodies both functionality and artistry. The back of the blade is shaped with urasuki, ensuring smooth cutting performance and long-lasting ease of sharpening.
The handle features a traditional Japanese construction with silver fittings and a mekugi pin, reflecting a design aesthetic that treats the knife as both a tool and a work of art.
Thanks to its stainless properties, Gingami steel provides resistance to rust, making it more practical for daily use compared to carbon steels.
